If she accidentally consumed red meat, the digestive symptoms often came on so quickly that she would not even make it to the restroom in time. Alpha-gal syndrome, often called AGS or the “red meat allergy,” is an allergic reaction to a carbohydrate molecule called alpha-gal. This molecule is found in most non-primate mammals and in certain ingredients or products derived from mammals.
Alpha-gal sensitivity commonly develops following a tick bite. Reactions may occur several hours after eating or being exposed to a triggering substance, which can make the connection difficult to recognize.
